This was absolutely amazing! It tasted like a cheat meal but all of it’s healthy for you! Instead of using pasta, sliced zucchini is used as the lasagna sheets and is layered with sauce and a mixture of spinach and cashew cheese. Everyone loved this dish. I didn’t have a problem getting everyone to eat their veggies with this recipe!
