So, I was really skeptical about using Shakeology, but I have to say it is one of the best investments I have made in my health. I have more energy, I sleep better, my digestion has improved, my sweet cravings are greatly diminished, and my time of the month is significantly better. This post isn’t to convince you to buy this product, but if you’ve been on the fence about trying it out, I say go for it because the odds are you will feel much better because you are providing your body with dense nutrition that it needs to run smoothly. Plus the chocolate tastes great and seems like an indulgence but it’s not!
Coconut Curried Lentils

I have honestly never had lentils this delicious in my life! It was my first time using curry powder in cooking, so I was a little wary of how this recipe would turn out, but I loved it! I did use a little extra coconut milk (just because I had extra left over from the canned coconut milk and had no other use for it, so I just dumped the rest in ^_^) and my lentils were thinner than the original recipe, but that didn’t stop anyone from enjoying them. The lentils were thicker the next day after having spent the night chilling in the fridge.
Modifications: Besides adding extra coconut milk, I used ground ginger instead of fresh; as mentioned above, I used curry powder instead of using mustard seeds, turmeric, and cayenne; I left out the cilantro because it’s not a favorite herb in this household; and I didn’t have coconut ribbons on hand, but I’m sure they would be a delicious addition next time!
Vegan Gluten Free Lasagna

This was absolutely amazing! It tasted like a cheat meal but all of it’s healthy for you! Instead of using pasta, sliced zucchini is used as the lasagna sheets and is layered with sauce and a mixture of spinach and cashew cheese. Everyone loved this dish. I didn’t have a problem getting everyone to eat their veggies with this recipe!

Good news! No allergic reaction from the vegan chocolate Shakeology! I tried the vegan tropical strawberry flavor today and while it was ok, I did not enjoy it near as much as the chocolate. I felt the graininess was more noticeable and the flavor wasn’t fantastic. I think it would be better in an actual blended shake. I am just using my shaker cup and using the mix with water because I don’t like messing with blenders on a regular basis haha. So, I will be ordering a bag of vegan chocolate Shakeology soon and after a while I will give an update on how half a scoop every day is working out for me. 🙂
So, I thought I couldn’t afford Shakeology right now (superfood protein shake from BeachBody), then I read that some people only use half a scoop every day instead of a whole one and thus a bag of Shakeology lasts them two months instead of just one. Why didn’t I think of that?! I have been wanting to try it for ages, so I ordered a vegan sampler pack that comes with tropical strawberry and chocolate to see which flavor(s) I like. (Non-vegan flavors include chocolate, vanilla, strawberry, and greenberry.) My package arrived today, just in time for a post-workout trial of Shakeology. I just had the chocolate one and was it was absolutely delicious! It tasted like the chocolate mix my mother makes. So, that one definitely wins the taste test. The texture was also pretty smooth, I was worried it would be gritty, but it wasn’t. It’s hard to believe I just drank something healthy haha! The only thing I’m worried about is Shakeology is manufactured on machinery that also handles eggs. I am allergic to eggs and my sensitivity keeps getting worse, so we’ll see if it causes a reaction. If not, I will definitely be ordering a bag of vegan chocolate Shakeology in the future. I will try the tropical strawberry tomorrow and let you know how I liked it.

Best Ever Mushroom Soup

This was my first time making mushroom soup at home and it was absolutely delicious and really easy to make! It has received a spot among my favorite recipes.
Modifications: Since the recipe says it only serves 2, I used the biggest packs of sliced mushrooms from the grocery store to ensure there were enough mushrooms to go around. This also yielded a greater amount of leftovers, yum! I also didn’t have tapioca flour/starch and didn’t substitute anything for it and it still came out just fine. If you do use it, the soup should turn out thicker, but it’s still delicious without it.
